We also decided to make two and this is one of the two.
For the first dessert, we made brownies.
We were going for making rocky road brownies, but we forgot to get the peanuts, but brownies are still amazing no matter what, so I decided to still make them.
We got this recipe from my cookie cookbook entitled Tate of Home Cookies. The real name of the recipe is Really Rocky Road Brownies, but since we just made brownies, we will just tell you what you did.
What you will need:
8 squares unsweetened chocolate
1 1/2 cups butter
6 eggs
3 cups of sugar
1 tablespoon vanilla extract
1 1/2 cups all purpose flour
Other things you need:
Preheat oven to 350
2 9 in square pans (we couldn't find one, so we just used our 13x9 glass pan. They were a bit thick, but we just cut them into smaller bites)
For a topping, marshmallows and chocolate drizzled on top. The chocolate drizzle is one of the unsweetened chocolate squares melted.
First of all you gotta melt the butter and chocolate. We tried to melt them together in the microwave, but it took a little longer then we thought. It took it about 3 minutes all together, but I took it out every minute to stir. Also our microwave is a little older, so things take a little longer.
Once the chocolate and butter are melted, mix them together and let it cool for a little bit.
While it's cooling, you can beat the eggs for about 2 minutes. While you are beating the eggs, add in sugar and beat those together until the mixture is thick, it will probably take about 3 minutes.
Stir in chocolate, vanilla, and flour.
After it's all mixed, pour mixture into the pans (or pan).
As you can see they look like they will be a little thick, also to the top right you can see a bowl of marshmallows. Those are to be used for the toppings (if desired).
We baked them for about 40 minutes, because they were so thick. The recipe calls for 25-30 minutes with the 2 pans.
We put marshmallows on top and put it back in the oven for a couple minutes to melt them a little. We decided against the chocolate drizzle because we figured there is enough chocolate in the brownies themselves. I will say that they were a lot bigger than we expected, the recipe originally calls for smaller pans, but we decided to try the bigger pan. We made them into brownie bits.
They were a HUGE hit with everyone. We were one of the last ones to get in line for food and there were about 4 slices left. It was flattering, but I kinda wanted a slice. Luckily Myke and I got a piece and we were very satisfied.
